Hugo Núñez - Anaerobic frozen natural micro lot 🇳🇮

Now what a name for a post harvest process. Hugo Nuñéz operates his beautiful farm Las Brisas in the middle of a forrest in Mozonte District near the border between Nicaragua and Honduras. He does his best to preserve the natural habitat on his 8,45 hectares farm. You can see that this sustainable intentions is a primary driver in Hugos work as it looks much like agro forestry and not monoculture plantation.🌳

We bought a lot of his Red Catuai, and the post harvest processing he did to this coffee really intrigued us. The picked and sorted cherries was fermented in closed barrels, then afterwards frozen for a whole 24 hours, thereafter thawed and dried using the intricate sleeping bag drying technique. 

The result is a fruity and sweet coffee that has a delicate herbaceous character too.
