What a name for a post harvest process! Hugo Nuñéz operates his beautiful farm Las Brisas in the middle of a forrest in Mozonte District near the border between Nicaragua and Honduras. He does his best to preserve the natural habitat on his 8,45 hectares farm. You can see that this sustainable intention is a primary driver in Hugo’s work as it looks much like agro forestry and not monoculture plantation.🌳
We bought a lot of his Red Catuai, and the post harvest processing he did to this coffee really intrigued us. The picked and sorted cherries were fermented in closed barrels, then frozen for a whole 24 hours, and later thawed and dried using the intricate sleeping bag drying technique.
The result is a fruity and sweet coffee that has a delicate herbaceous character too.
