This is the second of three micro lots we bought from Alex Herrera this harvest. It’s a delicate Gesha variety that we’re really excited to share with you!

The Gesha bush only gives about half the yield of other varieties, which makes it more exclusive and highly sought-after. This lot comes from Alex’s lower-altitude farm, Los Andes, and it’s easily the most elegant and delectable of the three coffees we roast from him. Think tea-like clarity with bergamot notes and a soft floral finish. Alex used a signature sleeping bag natural processing method to balance out the temperature during the drying stage and increase fermentation. The final result is a lighter-in-character cup, basically the coffee you can serve to the tea drinker in your family who says they don’t like coffee.

    *We use an Orea V3 for our pour over recipes but encourage you to play around with the equipment you have on hand.  

    Method:  

    0-10 sec: pour 50g water in a slow spiral motion to bloom (mild pour to gently disturb the coffee bed) 

    20-30 sec: pour 50g water

    40-50 sec: pour 50g water

    60-70 sec: pour remaining 50g water to reach 200g

    Wait until drawdown finishes at 1:55 min*

    *Drawdown time is determined by grind size and level of agitation of your pours. This is our recommendation but don’t worry too much about hitting the exact time. As long as your brew tastes good, just enjoy it and slurp away!
