This is the second of three micro lots we bought from Alex Herrera this harvest, enjoy reading a bit about his farm, and this specific micro lot below. 🤓
Alex is a 5th generation coffee farmer deep in the mountains in the Guatemalan region Atitlán, here he continues his families legacy by is producing excellent coffees on his farm Pampojilá. The farm is located on the side of the Atitlán Volcano. The magical environment around the farm nourishes and protects his coffee bushes of many beautiful varieties.
Alex has used an extended fermentation post harvest processing method on this micro lot. Picked from the caturra variety, it was fermented in closed barrels for about 300 hours then placed on patios for drying and switched between covered and uncovered with this long “sleeping bag” it is done to protect the cherries from the high stressing midday sun and cold nights.
This wild coffee really brings out a lot of florality and honey like characters, it really helps us in the dark and gloomy winter here in Copenhagen 🥹☃️
